Seafood and fish are a part of my heritage. My grandmother Etta, my dad’s mom, was born and raised in Monroe, Louisana and spent most of her life in Kodiak Alaska. Her love for good seafood and fish is unmatched! She was also was a cook on the Naval base there, and she inevitably passed that seafood love on to all of us in the family. In addition, my mother’s parents lived in Kodiak, and that’s where she was born and met my dad. Her brother owned a commercial fishing boat, and he used to call me “Anna Mae from Bristol Bay.” I used to love it when he said that. The ocean and the foods that come from it are just a part of who I am!
After I was born in Seattle, we moved to Anacortes, Washington on Fidalgo Island- part of the San Juan Islands. It is a magical place. We would explore its beauty and go on adventures like clam digging and crabbing, and we always had fresh fish on hand.
Later, I happened to marry a man obsessed with salmon fishing! He would go down to the river by our house and catch our dinner. We’ve been eating salmon at least once a week for years, so it’s no wonder that I came up with THE EASIEST SALMON RECIPE KNOWN TO MAN! With all my kids and working full time, I needed recipes that were easy. This is one of them. Like, it’s embarrassingly easy.

Anyhoo, this is the most simple salmon, and you can eat it alone, on a salad, mix it with mayo for some dip, do a bunch of meal prep, or whatever you want! In the pic, I topped a niçoise salad with the salmon and it was deeeelicious! But even on its own, this salmon is BOMB.
Wild caught salmon is what you want. Atlantic is another word for farmed, and you don’t want farmed because it is filled with additives, coloring, GMO’s, omega 6 oils, and is not good for the environment.
So without further ado, here is the recipe for the easiest fast food of all time: Anna’s EASIEST SALMON EVERRRRR!
Ingredients:
1 Salmon filet (wild caught)
1/2 stick of softened Kerrygold Butter
Salt and Pepper to taste
YOU GUYS, THAT’S SERIOUSLY IT!
1. Preheat oven to 400 F
2. Soften up Kerrygold butter- Spread 1/2 stick all over the salmon evenly (you can use ghee or your favorite oil here- but that Kerrygold hits different!)
3. Salt and pepper to taste
4. When oven is preheated, turn it to Broil on high and then put the salmon on the middle rack and cook about 6 minutes or until it’s done! (NO parchment, unless you like fires. Trust me…. it’s from experience lol)
(This was a small 1 lb piece so it was done in 5 1/2 min, if it’s super thick it may take 8 min, if you’re doing two slabs, it may take 10-12 min or more! Just keep watch!)

OMG – THIS WAS SO GOOD! It lITERALLY MELTED IN MY MOUTH. IT WAS TOO HOT TO TURN THE OVEN ON TODAY SO WE Stuck it IN A FOIL PACKET and popped it on the grill. ADDED SOME GREEN ONIONS FOR GOOD MEASURE – IT WAS FABULOUS. THIS WILL BE A WEEKLY STAPLE!
