Everybody knows I love tulips, but lavender is special to me, too!
I love visiting lavender fields on San Juan Island, and the lavender that’s included in this linen spray recipe is perfection. I travel with lavender essential oil to dab behind my ears for a restful sleep at a hotel, and love a good lavender hand sanitizer.
But I never thought of lavender in my food until I had my first taste of Honey Lavender ice cream from Molly Moon’s in Seattle’s Capitol Hill back in 2010. After that, I was hooked!
Since moving away from Seattle, I’ve started making my own Honey Lavender Syrup to use in multiple ways!
Honey Lavender Simple Syrup is a delicious and versatile ingredient that can be used in a variety of recipes, from lattes and teas to ice cream and granola. My recent fave is in a matcha latte!
Not only does the syrup add a lovely floral flavor to your dishes, but it’s also easy to make at home with just a few ingredients.
To start, gather your ingredients:
Heat water in a small saucepan on medium high heat until it simmers.
Once it’s hot, add the lavender flowers and reduce the heat.
Stir the mixture and let it simmer on low for 3-4 minutes.
Once the lavender has had a chance to infuse its flavor into the water, remove the saucepan from the heat.
***It’s important to let the lavender water mixture cool to just warm before adding the honey, as adding the honey while the mixture is still hot can destroy the beneficial enzymes and nutrients in the raw honey.***
Once the mixture has cooled slightly, add the raw unfiltered honey and stir until it’s completely dissolved.
Then, strain the mixture through a fine mesh sieve to remove the lavender flowers.
Finally, funnel the syrup into a bottle and store it in the refrigerator for up to 10 days.
With this easy recipe, you can enjoy the delicious flavor of honey lavender simple syrup in all your favorite recipes.
Try it in an almond milk honey lavender latte, matcha latte, drizzle it over some fruit and grain free granola, or add a little to your bedtime tea for a soothing and aromatic treat. Or, simply pour a little over some dairy free vanilla ice cream for a delicious dessert. The possibilities are endless!
