Honey Lemon Salad Dressing

This week I shared a spring dinner party tablescape! In it, you may have seen my take on a Nordstrom Cafe favorite, the Pistachio Chicken salad. Let me tell you, Nordstrom has the best salads! From their salmon nicoise, to their cilantro lime shrimp, their salads are unmatched. One of my favorites is The Pistachio Chicken Salad, and I shared my take on that a few years back, HERE.

This time, as I was making it, I realized I didn’t have a good dressing on hand, so I eyeballed some lemon juice, honey, coconut aminos, dijon mustard and salt for a quick dressing and it was delicious! So, due to popular demand, here is a measured recipe for you!

Honey Lemon Salad Dressing

• 2 tbs Dijon Mustard
• 1/4 cup quality extra virgin olive oil
• 4 tbs lemon juice
• 2 tbs coconut aminos
• 2 tbs honey
• ¼ tsp kosher salt, plus more to taste

Whisk everything together, leaving the olive oil for last, and drizzle that in while whisking. Use on top of any summer salad, for a fresh burst of sweet citrus!
