I’ve had some questions about what I eat after a run, and I honestly keep it pretty simple. Usually it’s some Organifi Green Juice for recovery and energy for the day (if you need a code, it’s ANNAMAE), and then an easy breakfast scramble. Here’s my recipe!
INGREDIENTS
1/2 onion, diced
1/2 red pepper, diced (or a handful of whatever veggies you have on hand!)
Handful of spinach or arugula
4 strips uncured, sugar/nitrite free bacon
4 eggs
S+P to taste
DIRECTIONS
On med heat, cook bacon until crisp (about 3 minutes each side)
Remove bacon and drain fat, leaving a little in the pan.
Add onions and pepper and sauté until softened- about 3 minutes. Meanwhile, chop up bacon.
Crack eggs into pan and swirl gently until almost cooked through.
Turn off heat, stir in spinach and bacon. Salt and pepper to taste.
Optional: Top with avocado and your favorite hot sauce (mine is Cholula) and serve with fruit.
And there you have a filling, healthy breakfast!
